Tartine is French for open sandwich – something new to learn everyday. And this was at a Swiss restaurant – Raclette. The same restaurant that served me liquid cheese off a wheel right on a plate of roasted potatoes.
The appetizer was followed by an open color-rich, beautiful, symmetric sandwich. A thick slab of light-brown focaccia bread spread with delicious green pesto, topped with red cherry tomatoes and white mozzarella cheese. The careful placement of each of piece cherry tomato mozzarella cheese in a symmetry that brings you a certain inner peace just looking at the uniformity of it all. All of this splashed some vinaigrette.
