Onions, Apples and butternut–probably not the best sounding soup ingredients but somehow Brueggers manages to come up with a soup that is “interesting.” The taste is quite different with neither Apple nor Butternut overpowering the soup but at the same time it feels a little sweet and sour. Add to this the thickness of soups and Butternut Squash is a soup I can have once in a week or two but not everyday.
